I used to eat a fair amount of Smucker’s red raspberry jam. Yum. But at 13 g carbs per Tbsp it obviously is a non-starter. Yesterday I bought a jar of the sugar free stuff with 5 g carbs and 3 g fiber for net 2g. I sometimes question the net carbs reported but it sure tastes like 2g net. That is to say it doesn’t taste anything like the real stuff. Got a feeling this jar is going to last a looooong time.

I tried to make strawberry chia seed jelly once. Just smushed fresh strawberries and a tablespoon of chia seeds mixed in. It…wasn’t good.
I’m starting to suspect that rather than trying to force keto ingredients to replicate the sugar and carb-filled recipes I used to love, I need to seek out recipes that make the most of their inherent properties. For example, a keto cheesecake or creamy lemon bars are easy and delicious, because they depend mostly on fat for their flavor and texture, but a keto angel food cake is an exercise in frustration and sadness, because angel food cake relies on cake flour and sugar.
I used to eat that stuff. Didn’t think it was too bad. But don’t know what Id put it on now…Plus, 2 gms of net carbs X 3, which is probably how much Id eat, is more carbs than I want to add to my daily totals.
