How to thicken with xanthum gum?

I have had no luck trying to thicken a sauce using xanthum gum. I whisk like a maniac but still get a gummy mess. Any suggestions?

I’ve used it a couple of times. It’s easy to use too much. And it seems like there is a bit of a delayed reaction in the thickening process.

Wish I had something more specific to suggest. Hoping others can fill you in better. I’ll be interested in others’ experience, too.

I’ve just started to use it and love it. I’m no expert but this what I have found thus far. It works well but can be a bit tricky. Start with very small amounts - eg 1/8-1/4 tsp. Sprinkle on ( to minimize clumping), stir well and wait a few minutes 3-5) before thinking you need to add more. And yes, thickens more on cooling. I find if I go slow, with a light touch it responds more lovingly:slight_smile: hope that helps

DH just tried to make sausage cream gravy with it. He was disappointed, thought it wasn’t thickening. I went in and cooked it a while longer and it turned out fine. Yes it does thicken when cooled, so hopefully he can just warm it up for his next meal. He really missed biscuits and gravy, was having them when going out. But he is T2D and I kept telling him to find an alternative that we can cook at home. Without all the carby stuff.

I am still getting used to using it. Tried it with a gravy, and it turned out to be too thick. Seems that it takes a while to work when it’s hot (as some people have already hinted to). Although I made a whipped topping a few nights ago, to put on a chocolate mug cake I made for my wife. The topping was just whipped heavy cream with a tablespoon of Swerve, and it turned out to be great! The next day, put in just about a 1/2 teaspoon of xanthum gum (I had about a cup of topping left) and it firmed up almost to the consistency of a frosting! Going to be experimenting with this more!
