I normally eat a keto diet. Yesterday, however, I tested a recipe I might use for a special occasion, such as Christmas. It’s a beef tenderloin cooked on a bed of potatoes, with a Persillade sauce. I ate a very low carb “blunch” (usually don’t eat breakfast), then had this for dinner. I ate the potatoes and the sauce, both of which are “high” carb.
As expected, my blood ketone values were low this morning (at 6:19am). (By “low” I mean a value less than 0.1) However, as of 1pm/1300, my blood ketones are around 1.0 mmol/L. I tested twice, and got 1.0 and 1.1. I am fasting today and will not eat until about 10am tomorrow.
Does that make sense? Did I not eat enough carbs to fill my liver glycogen?
I’ve been low carb almost 5 years now, keto most of that time.
And, the recipe was great, but not suitable for 12+ people, which is what I was looking for, as it would be too expensive for that many people.
