Holy moly... eggplants have 40g net carbs each?

Glad I’ve started tracking with Cronometer; I might as well have been eating sweet potato. OMG. Large eggplants are 40g net carbs. Hard to be in ketosis when dinner is meat and a bunch of eggplant.

I have no idea how you guys working on 20g total carbs/day (as opposed to net carbs) are doing it. It’s challenging enough to stay under 20 or 30g net.

From what I read, a cup has about 5g. I think you’re safe. Unless you’re eating the whole thing.

Hummm, that dosent sound right… the info I saw said 1 cup eggplant is 4.8 carbs, 2.9 from fiber. So 1.9 net carbs

That probably depends on how large your large eggplant is… :stuck_out_tongue:

But to notch up 40 net carbs that sucker would need to be over 11 - 12 cups… and ive never seen one anywhere near that size

Dude, there are 40g net carbs in a 1.7kg or 3.7lb sized eggplant. If you can manage to eat this in one sitting you will also be get 3900mg of Potassium as a bonus.

I’ll give you the macros for my moussaka recipe and you can work out the portion size you are willing to risk… enjoy

I love using fried eggplant slices as a base for serving hamburger, not least because eggplant slices soak up oil (I use coconut oil) like a sponge. I use salt and pepper on both sides and fry up until golden on both sides. Delicious and lots of fat. Then I put a burger on top of two or three slices and add a generous amount of crumbled goat cheese. It’s one of my favorite dinners. :smile:

Measure a cup of eggplant 10 times, you’ll get 10 different amounts everytime. With that said, I f’ing love eggplant! One of the things I miss a lot.

A large eggplant will produce 8 cups of cubed eggplant, unpeeled.
That’s a lot of eggplant to eat at a sitting.

We had an eggplant from the garden about a week ago. It made two meals for two people, and it could have made three if we hadn’t loved it so much we made little piggies out of ourselves.

Homemade eggplant parm. Dang, that was good.

As mentioned already, eggplant varies quite a lot in size and they don’t weigh a whole lot for their size. A 3.7 pound one would be quite large. I don’t think the one we ate last week was half that.

Does anyone have issues with wasting food?

So many things like this I want to try but I know I won’t be able to get my husband or son to eat, and I don’t think I can eat it all myself before it goes bad, so I won’t purchase it because I feel bad about wasting half of it.

Does eggplant freeze okay?

Googled how to freeze eggplant and read several of the articles that came up. This sounded like the easiest method. . . by far.

I’m gonna try to get to the local farmers market this weekend. I’ll be looking for a couple of nice eggplants and give it a shot myself.

I haven’t tried freezing it myself, but I live alone and I don’t have any trouble going through a full eggplant’s worth of slices within a few days. I cook them all at once and they reheat well. The texture does get a little soggy, but it’s all soaked-up coconut oil so it’s still pretty yummy. I have to saute them in batches, and it does require adding more coconut oil after each batch goes through the frying pan, because they soak so much up.
