Has Anyone Tried Cloud Bread?

Not much of a baker myself…but I’m intrigued. Will it hold up as a sandwich? A bun for burgers or hot dogs? Or should I just not bother with it?

As I understand it, most cloud bread recipes use protein powder (often whey) as one of the main ingredients. You’ll want to be aware (if you’re not already) that whey can spike insulin. How much will probably vary from individual to individual.

I don’t avoid whey completely (I still have some whey protein powder that I use on occasion, particularly if I’ve been really active), but I also don’t make it a big part of my diet.

Another option if you want something for sandwiches is to make some fathead pizza dough, and make smaller crusts.

Thanks! I tried fathead pizza once and wasn’t impressed. Have to give Carl’s version a go.

I did not have good luck with cloud bread. You can use it on a sandwich but it’s an odd texture. They also got kind of soggy when I tried storing the extras.

Soul Bread typically contains whey and Cloud Bread (aka Oopsie Bread) is eggs, cream cheese/sour cream/cottage cheese, cream of tartar, sometimes sweetener

If you can …

  • get good peaks going on the egg whites
  • use double acting baking powder
  • fry pan on low, pouring batter in a burger circle (cookie cutter looking thing) with cover on

you get some nice buns going. Almost steambunish

I’ve tried many versions – I find the original oopsie bun too eggy. This flax bun is my favorite to replace burger buns, etc. The almond version is also good. Sometimes I mix almond and flax flours together. http://cavemanketo.com/faux-bread-quest-flax-buns/

I found the flax buns too dense for sandwiches…I like the idea of going half and half on flax/almond meal. Thanks!

I have tried making it twice. I love to cook, but I will say that oopsie bread is just not worth the trouble for me. If I want bread, I want something with substance. Oopsie bread is like eating a cooked egg white…boring! If I want an egg I will just fry one up. That’s my two cents worth.

It was a lot of work, & mine fell apart when trying to use it at sandwich bread. 90 sec keto bread is much simpler and faster to make. You can Google it and find a ton of recipes. It holds up a lot better but is a little dry. Use plenty of mayo or butter with them!
