Typically, I use a ban Marie method yet the directions do not call for it…barely cracked because I left the cake in the oven overnight…gasp! Oops!
Taste…truth be told, I used a 1/2 a cup of Pyure. Don’t like it too sweet myself…here is the cut piece.

I took this cheesecake today to the annual picnic at the church where I play, and it was a really big hit. I made a point of mentioning to everyone that the cheesecake was sugar-free, because the Vicar is diabetic, and I didn’t want people to think he was going off his diet if they saw him eating some. He was delighted to have a dessert he could eat, but much to my surprise, several other parishioners were equally delighted to learn that it was sugar-free. People who tried it loved it, and I got lots of compliments. Several people were surprised I had made it myself; they thought it had been made by a professional.
Note: This recipe is very sweet to anyone who has been off sugar and other sweeteners long enough for his or her taste to change, so be careful with how much you sweetener you use, when making this recipe for yourself. But for sugar-burners, I recommend the full amount of sweetener specified in the recipe. When I took this same recipe to a friend’s Easter dinner, I had cut back on the sweetener. It was plenty sweet to my taste, but not nearly sweet enough for the other guests. With that experience in mind, I made sure to use the full amount of sweetener this time, and I’m sure that had a lot to do with what a big hit this cheesecake was today. So the moral is: Know your audience.
