Got my Instant Pot and my Mojo this week! Would say I am officially all in!

Well, this week I received my Keto-Mojo and also picked up an Instant Pot! Exciting!

My Keto-Mojo was actually covered by my FSA. During my last Dr. visit I discussed my Keto journey with him and he was very supportive. We have good baselines from back in August but we will be doing blood panels every 6 months to monitor. No issue with writing up a “script” for a glucose/keytone monitor and my claim went through my FSA without a hitch. (BASIC FSA for refernce). My first test I did last night was 0.6. Going forward I plan to monitor in the AM a few days a week to see where I am at. I do plan to monitor the glucose as well, just want to study it up a bit more to ensure I understand it.

This week I also picked up the 8qt Instant Pot Ultra. It was a buy of the day on Amazon early this week for $120. Doing some keto country ribs tomorrow and either butter chicken or chicken shawarma later this week. The cooking aspect is one of the best parts. I love to cook and this has given me the ability to try some new things and get a few new books. Loving it so far.

Almost 9 weeks in. Down 17 of my 50-60# goal and feel great. Keto-On!

I could probably use my HSA to purchase a mojo. I’m super curious as to my ktones in blood and my blood glucose. Just haven’t decided to pony up the money. And the strips are so expensive. The Insta pot is yes instant but I have plenty of time I can use a crockpot.

The pressure cooking of the instant pot is much better. We rarely use our crockpot, though we do use it. The instant pot also is a slow cooker, yogurt maker, etc. If you only can afford one device, I’d get the instant pot over a crock pot.

Coincidentally I ordered an Instant Pot just recently due to a special promotion. It’s due to arrive next week (when I will be out of town) so maybe next weekend I can start figuring out what to use it for. :thinking:

Here’s a tip on the Instant Pot - it’s not that “instant”. Don’t get me wrong - you can have a nice, tender stew or whatever perhaps faster than the traditional way. It’s takes a lot of ramp up and cool down time. Still a nifty device.

I love Cuban ropa vieja - which is keto. Some people do hard boiled eggs too.
