If I were to make Carlshead pizza crusts in advance and store them in the freezer, should I do any par-baking after forming the dough? And then when I want to use the pre-made dough, will it need to be thawed in the fridge?
Freezing Carlshead Pizza Dough
I would cook it to the point of the toppings. Then seal and freeze. I would take it out when ready to eat; top and finish cooking. I have a similar recipe I use. I made ten and froze them in a stack with freezer paper between so I could get them apart without thawing. I’m all about having extras and making ahead.
Here’s the recipe from Lowcarbfriends.com4 :
Mix 2 cups of mozzarella cheese
1 cup of cheddar cheese
3 eggs
Combine all together. I used parchment paper, otherwise use nonstick spray on your pan. Spread it thinly across your pan. I used a cookie sheet, it wasn’t enough to cover it all but by the time it cooked up it almost all reached the edges.
Cook at 450 degrees for 10 minutes. Watch for it to be melty gooey and a little crisp on the edges. Let cool.
One day when I had time I made 9 of these crust. I cooked them on a silpat mat or you can use the parchment. Once done I stacked the crust up and placed wax paper between each. I covered them and put them in my freezer. When I want to make a pizza, I just grab one out, add sauce and toppings then place under the broiler until the cheese is melted and slightly browned. Don’t forget to cook this on either parchment (the edges will burn under this amount of heat) or special mat for cooking. It sure makes having a pizza in a hurry doable. Enjoy.
If you like to make ahead. There is a lowest carb pancakes recipe in the recipe section that freezes well. I add about a T. of coconut flour to it. I am cooking for my daughter so pizza and pancakes are needed staples. I also use the pancakes to make her nut butter sandwiches.
