Eat whatever cheese you want to eat. Don’t exceed 20 g of carbohydrate/day. That’s it.

Just don’t eat processed cheese. Read the ingredients list; “real” cheese has very few ingredients. Also, read the nutrition info; real cheese will have 0 to 1 grams of carbohydrate per ounce.

Cheese from New Zealand might be better than domestic cheese (because of how the cows are raised). It has a distinctive flavor that you might or might not like.

I go for cheese that hasn’t had color added, so only white or cream colored cheese, I make sure there are 0 or 1 grams of carbs per 30 grams, and I get the highest fat content I can find for the particular type.

We shop at BJs. I buy Gouda and Havarti cheeses. Love them.

They all pretty much have the same stuff, Big Y will probably have the most keto options (meaning branded) Stop and Shop has gone to crap for that stuff (at least in MA) for a while BJs had a section of keto things but I haven’t seen that in a while. Just get real cheese, not the low fat skimmed out versions since they’ll have more sugar and you’ll be fine.

Here in Connecticut it seems to vary with the store manager. I asked for pork rinds to be special-ordered in one Stop n Shop, and the manager flatly refused; while the branch in a neighbouring town regularly carries them.

I try to keep my cheese semi clean. Like, won’t eat most shredded cheese. It contains potato starch, which is an anti-clumping agent. Just an example.
