I did a 70 mile / 7 day backpacking trip with my wife in July. We did the three sisters loop in Oregon with some side trips. I ran full keto & my wife added triscuits, balance bars, and jelly to her kit for a few extra carbs.

Here’s a quick summary of our menu:

Breakfasts:

  • Keto granola w/ powdered cream premixed in ziploc bags – just add water, coffee

Lunches / snacks (this was all on the go type stuff)

  • Cheddar cheese
  • Salame, couple different types
  • Carb balance tortillas (1 per day)
  • Peanut butter
  • Macadamia nuts
  • Almonds
  • Smoke house almonds (big hit – had to be rationed)
  • Dark chocolate
  • Moon cheese (liked them at home. Didn’t eat them on the trail)
  • Landjager
  • Wild salmon jerky
  • Duke’s hot & spicy sausages
  • assorted other high fat/protein & low carb snack sticks
  • Quest bars (couldn’t make myself eat them)
    Etc.

Dinners:

  • Knockwurst and sauerkraut (hauled in fresh for first night out)
  • Tom ka gai w/ freeze dried chicken (based on @Bryan_Ausinheiler’s recipe but adjusted.)
  • Beef chili (freeze dried beef, dried veggies, bullion, ghee, spices, soy lecithin), cheese
  • Beef stew (freeze dried beef, dried veggies, bullion ghee, spices, soy lecithin)
  • Freeze dried eggs w/ bacon and cheese
  • Tuna pesto wraps (foil wrapped seasoned tuna, pesto, low-carb tortilla

Pre-keto I would plan for of 1.5 pounds food per day per person. Ditching the carbs, the menu came out to 2750 calories per day and 1.4 pounds per person per day.

Other than dinners, planning was pretty easy. Coming up with keto dinners that were fun to eat was a little more challenging. Took some ideas from @Bryan_Ausinheiler’s book and improvised from there.

We also mixed up a bunch of keto aide powder using natural calm, lite salt, and regular salt for electrolytes. A liter/per day worked out well.
