The best fats for cooking with are tallow, lard, butter, bacon fat, and coconut oil. Avoid cooking with seed oils, because their smoke point is too low, and you risk creating unhealthy by-products if the polyunsaturated fatty acids in them are overheated. Olive oil is good, if not heated, so use it to make mayonnaise and salad dressings, but the other seed oils are best avoided altogether.
