If you want to get into the science of all this, I recommend two books I’ve found very helpful: The Big Fat Surprise, by Nina Teicholz, and Good Calories, Bad Calories, by Gary Taubes. They both tell the story of how the U.S. dietary guidelines came into existence, and the “science” that underlies those guidelines—such as it is and what there is of it.
tl:dr: There isn’t any. They just made it up.
