According to Dr. Jason Fung it does, but very little.

Minimally, hardly at all which is why it’s the preferred fuel source on keto.

The way I understand it, any time you eat something, no matter what it is, a little insulin is released. If the insulin isn’t needed, then no more gets released.

I have to keep reminding myself that the research either isn’t yet done or isn’t yet written up, because this area of inquiry is so new. So speakers contradict each other all the time. I try to keep up only with the newest information, but even then there are conflicts.

Fat goes right to liver unless there is protein. Fat with protein will trigger some insulin. When you eat fat with carbs insulin spikes high and fat storing kick into high gear.
