well it can not be easy to keep falling off so I would say this to you. Finish your target off, don’t worry about it then promise two days afterwards to go keto/fat adapted and stick to it.

also why do you want to be Keto, performance/health and weight, well focus on that. On the week you go keto get bloods, set a marker and measure your blood pressure and other NSV’s

then just ride, enjoy and of course as I say to everyone, go MAF …
