Personally, I’d pour the liquid stuff off (unless you’re showing hot grease poured onto cold). The fat from the bacon I got from Fire in a Bottle was solid at room temp. It was slightly less solid than the liquid drained off his ground pork (totally solid at room temp), but not by much.
