Are enzymes that have been added to food bad for our bodies?

I think you’d need to be more specific. There are lots and lots of enzymes, and some may be beneficial while others might not.
Some folks take digestive enzymes to aid in digestion of certain foods.
In that case, I think the enzymes are part of making the Parmesan cheese. I wouldn’t worry about it.
Enzymes are nothing more than protein molecules (or rarely, RNA) that help chemical reactions to occur in situations where they normally wouldn’t without the presence of said enzyme due to low temps, incorrect pH for the reaction, etc. Because they are in parenthesis, the ingredients are actually for what was used in making the cheese. Enzymes are necessary to assist the “cheese cultures” in converting the cow’s milk to delicious parmesan! More than likely, most of these enzymes were used up by the cheese critters (either fungi or bacteria) during the cheese making process so there aren’t that many left by the time you eat the cheese.
