I am currently fasting everyday and eating at about 7.30pm I am eating about 800 odd calories at meal time.
Should I be trying to up calories or is this sufficient to be going along with?

Good question. That’s something I have been curious about also.
I’ve generally been sticking to my macros to ensure I get plenty of fat in my meal and then eating to satiety. If that means I get to the end of the meal that I’ve prepared and I’m still hungry I’ll have a little cheese.

I try and eat OMAD (One meal a day), I can’t fast any longer as I have medication I have to take once a day so the longest I can fast without any serious digestive issues is 23 hours.
I eat between 1,500 & 1,800 cal in that one meal. Its fairly easy with lots of fat etc, Sometimes I will get 75% through the meal and feel full but I force myself to eat. I know this goes against the “eat to satiety” principle but if I don’t eat this amount, say, 1,000 cal, 2 hrs later I will find myself standing in front of the open fridge picking at cheese and ham etc because I am hungry. And this is a problem because I want to keep my insulin down for 23 hours a day.
When I had lots of lbs to lose I found I could eat 900 cal and not be hungry for 40+ hours with lots of alternate day fasting but now I only have about 10 lbs. My body has much lower fat energy to tap into to fuel my metabolism so I have to orally consume over 1,500.
Note, I don’t intentionally monitor my cals but the online tool I use to monitor my macro’s also gives me an estimate.
Your body will tell you. If you are hungry a few hours after only eating 800 cal then NO its is not sufficient but if you can go the full 23 hours without feeling hungry then great, keep going until your body tells you otherwise.
Im maintaining my weight and can add a few kilos without an issue, so my aim is 2000 cals a day. 75-80fat, 8-10carb, rest protein.
Im not a large chap, 54ish kilos 5’7. I can eat my 2k at those macros within a 2hr window. Usually, I’ll have a little starter of brie on my flax/hemp seed bread warmed in microwave, then I knock up my salad or meat n veg meal, which would 30mins or so, quicker if I’m using one of my frozen prepped meals. Then about 1/2hr to eat, including my dessert of almond milk choc milkshake and a chocolate fat bomb to make up fat macro if required. Topped off with two squares Lindt 90% chocolate (I now dislike the taste of any chocolate less than 85%)
So with practice its easy to eat your calorie requirements in one meal, but that meal may take 1-2 hours to finish if its a 3 course one like mine mostly are.

I’m trying and just experiencing on hie my body feels after I’m eating my OMAD
Today I ate around the 23 hour mark
I’m already use to the macros and Cals ( I eat the same food a lot ) , I was at 80% fat at around 1300 calories or so…I was ok and really full
Then about 2 hours later, I was hungry, more in the mind. I ate a Keto dessert…so brings me to around the 1900 calorie mark
So, if I’m stuffing myself to get in the 2000 or cals in my OMAD…it’s ususlky too much on my stomach right after
Right around 1500 seems to be my sweet spot ( for me )
Like I said today, pretty close to that today. Just decided to eat more. W a dessert
My point , mix it up. lol
Is 800 cal enough for you?
Some days yes, other days your hunger or body may say no
