Displaced Wisconsinite here. Unfortunately I was not keto until after I had to move away, and when I was still living in WI I was ‘scared’ to eat cheese because it was ‘unhealthy’.

I work for a cheese processor(packager), I literally have 40 pounds of cheese in my freezer.

I was wondering if you can freeze cheese! Any types that don’t do well frozen?

I freeze mostly hard cheeses, that is what I deal with so I get a good deal on them in bulk. I freeze my shreds and what is called “RA” or dice, and slices, mainly since I don’t have a lot of room left in my fridge if I have 5# bags of it there plus it keeps better once its opened. I do freeze mozzarella and provolone in RA for my fat head pizza crusts, which I put into gallon zip locks once it is opened. I also keep my cream cheese mostly frozen until I need it, I cube it up before freezing for ease of use as I get it in 2 pound blocks. The cream cheese will separate after it thaws within a day or two though. I don’t freeze the cheese I smoke, which I vacuum pack and leave in my fridge to age for at least several weeks to many months. I would imagine you cannot really freeze soft cheese like brie and probably not Feta or other goat cheeses.
