Easy Barbacoa

I picked up three steer heads at the locker yesterday. This one was brined overnight, and is getting double wrapped in foil before it goes into my electric water smoker. Too bad I don’t have a pit and Mesquite wood, but apple wood and a smoker will have to do. I’ll know the results in 10 or 12 hours.

Success. Rich, moist, fatty and with a mild smoky taste. I can understand why it’s popular for tacos. The meat tastes very similar to beef tongue. I did try the brains. Interesting but kind’a bland. The dogs love’em.

I love tongue, but it seems to be impossible to obtain in the northeast U.S. anymore. What appeared to be the only delicatessen in New York City that carried tongue closed years ago, and the only delicatessen in the mid-Hudson Valley that carried it closed a few years later. Anyone have a good source?

Check Mexican grocery stores. Even Walmart if it’s located in a community with a Hispanic population.
