Duck fat and tallow and ghee, oh my!

I live in a small town. We have 3 stoplights to give you an idea how small (when I moved here 25 years ago it only had one). Anyway, we have a small Walmart supercenter, but it’s a single entrance store, no auto center, you get the idea. Very small. A couple of years ago I was hard pressed to find coconut oil. They had it back then but only one brand, one size.

Today I really looked at the oil section. I usually just grab my usual brand of olive oil without even fully stopping as I pass by, but today I stopped and looked.

They had duck fat. And tallow. And ghee. And freaking coconut aminos. And all kinds of other stuff. I was gobsmacked. When did this happen? I realize the selection is still limited compared to what a lot of y’all are used to, but this is a redneck small town. I’m just floored to find all this stuff here.

And yet they didn’t have unsweetened coconut flakes. Go figure.

I was pretty amazed to see that stuff in Wally World, too.
Duck fat is awesome but expensive. I made some really good fat bombs with it a while back.

Tallow is super easy to make yourself if you can find a butcher that will sell you suet.

Oh well, I won’t be eating duck fat or tallow since I’m vegetarian, I was just shocked to see it. Keto is really taking over!

Wow. I live in the sort of place that you’d think would have those things on the shelves and I’ve just never bothered to check. I’ve been seeing some recipes for veggies roasted in duck fat and I kept thinking: Where the hell would I buy that? A fancy butcher? Apparently I should just check the grocery store.

@Sharon_E I attribute it to the foodie movement in general. People are finding ways to spruce up their home cooking thanks to food trucks, pop up restaurants, tv shows, etc. Even for someone not on keto these ingredients bring some great flavors.

You found duck fat!!! I have been searching for the Tallow my store supposedly sells, but haven’t found it. I always thought it should be near the lard in the cold section. I’m going to look in oils next time.

I could ask someone I suppose too.

We used to be rural. More of a bedroom community now. 40 years ago no traffic lights. Last time I counted 2 dozen or more
