Starch is a carbohydrate (sugar) just like any other. It may take a little longer than others but it ultimately becomes glucose. Some quibble about how big a glucose spike it causes because of however long it takes to be converted to glucose. Bottom line: we do not need to eat sugar for any reason. Ketosis and gluconeogenesis will supply your gut biome with all it needs to thrive. β-hydroxybutyrate will create a healthy gut environment.
I took potato starch for a while, about 6 months. It did not help me, only seemed to cause side effects (start low if you take it). At the time I took this, though, I was taking pin-prick blood but not that often, apparently. I was able to stay in ketosis, at least. Looking through my records, I did not take a test good enough to determine what happens just taking starch.
Just eating regular minimum carb KETO is good for gut health. I don’t know why you’d want to eat raw potato or potato starch? Getting off grains and processed food should give your gut health the boost it needs. If you want to do extra make sauerkraut. Whole vegetables contain more than enough fiber, which is only needed when you eat them. There is zero dietary requirements for fiber, in fact many believe you’re better off without it. Myself included.
