I am a hobby baker… i suppose thats what you call someone who does $500-$1000 Birthday and Wedding Cakes in my house right? I have been baking my whole life and when you have done it your whole life including 4 years of gluten free baking, you know what you can expect products to turn out like. You know you can expect textures to look and feel different and even bake differently.
Well… can i just say…it really really irks me to be an avid Pinterest lurker and see Keto Bloggers giving these amazing Keto Baking recipes out…but what they don’t do, is actually show you the product in its finished and presented state. What do they give you??? A picture of a product that is full of gluten and full of sugar and does not 100% reflect the actual product…aka… they took any ol photo of food and copied/pasted into their blog and showed people what they want us to believe the product will come out like…
Clearly, having baked for so many years, i know for a fact that an almond flour doughnut is not going to resemble anything close to a flour filled-sugar filled yeasted and raised doughnut. BUT…do you think the people who are newbies at baking and especially new to Keto baking, going to look at the Blog photo and say “Haha…thats not what it will look like!” Instead they are probably going to look at the food with sheer delight and say “O.M.G Brenda…look at those doughnuts. We are soooo making those!”** Point is - They are so busy dreaming of having foods on Keto that will replicate there sugar laden ones…that they arent even thinking about the fact that, almond flour doesn’t become fluffy and glutenous.
Anyway… i sympathize with those who find themselves having a baking challenge thanks to pinterest and all their fake photos… In the words of a great show based off re-creating Pinterest foods…
