He’s back for dinner - that’s keto Danish meatballs, with celeriac if I get myself to Sainsbury’s at some point (need more cream anyway).

Oopsie bread!!! I have been looking for an opportunity to try that. Off to google recipe…
I can report that Oopsie bread - or, at least, my first attempt at it - was a little on the soft side for making a sandwich, but mostly held up. And I started frying the bacon (in butter, mmmmm) a little too soon and had to turn the heat off 5 minutes before the oopsies were ready - therefore my sarny was lukewarm. But yummy!!
And even better - my BG when I ate was 5.8, and has not got higher since. I’m loving what keto does for diabetes!!
Yep! Oopsie is pretty soft. I use them more like a wrap and “roll” my goodies up in it. Kind of like pig-in-a-blanket. In fact I love oopsie rolled around a link sausage with some cheese and spinach inside
