Welcome @yogipete and @razorjack Great to have you join us. We’re pretty loosey goosey and define our own dairy free challenge.
Dairy Free April
Good find! That’s one of the very few brands I’ve been able to find in my area without carageenan.
The big sacrifice for me is tasty cheese binges. Any suggestions for a substitute binge food?
Also, what will we eat for a fat-head pizza substitute? It almost feels sacrilege to say that.
I never got into making fathead pizza, made it a couple of times. Instead, I use a base of thinly sliced roasted eggplant or zucchini brushed with EVOO and then add other ingredients like roasted garlic, cheese, meats and more veggies and fresh herbs. I eat rib eye when hubby eats pizza. He prefers the pizza.
The word ‘binge’ has negative connotations for me but if you can do it and be okay with it, then go for it. You might substitute some keto friendly nuts.
I think I’ll go a cauliflower flaxseed base.
Binge is all good with. Love indulging every now and then. Feels healthy as long as it’s not on carbs.
Chugging along nicely without dairy. I realize I’ve got my fingers in goat cheese daily giving Karma her milk thistle (keeps her liver enzymes normal) and her EFA’s. She loves it! I have no desire to taste it, in fact, it never dawned on me to do that. Had liver, onions and bacon last night. Tender pink liver with caramelized onions and some cooked bacon is a nice dish that I make every couple of weeks. Tonight is a pork tenderloin stir fry with a wasabi mayo that I found on the Diet Doctor website.
I cut out dairy on march 30. My weight had been heading up for the past three months. This seems to be helping. The scale is finally heading in the right direction. Oh, I’m still eating butter. Some things I just can not give up.
Back from one of my favourite activities…food shopping. Got some beautiful rib eye, thick cut peppercorn bacon, organic baby greens and lots more. Had a salad with baby spinach, bacon and HB with a dressing of sea salt, fresh pepper, EVOO and ACV which hit the spot.
Also, got in a Body By Science (BBS) workout this morning and will do some more VirZoom this afternoon along with a romp with Karma.
Thanks to @gardengirlkp for mentioning Headspace in the forum. I checked it out and have been doing it daily (over 3 months) first thing in the morning and enjoy it. I’ve never been one for meditation as I don’t sit still for too long even though I did a fair amount of yoga w/meditation in Vancouver years ago. Hubby has nicknamed me Serenity Lightening. It’s perfect!
How’s everyone else doing dairy free (your personal definition of dairy free)?
Sticking with butter only so far and doing great!
I accidentally ordered a Wendy’s Baconator burger the other day and had to scrape off all the fake cheese and cheap mayo and replaced it with avocado mayo, but no worries.
I am getting more accustomed to the taste of the coconut creamer I’m using instead of HWC, but I still need to add some sweetener when I didn’t need to with HWC; the trade-off is definitely worth it so far.
Feeling like I’m in my old dairy-free groove… when I first started keto over 2.5 years ago. Hard to explain. Lighter, even more energetic than I normally am. lol I think it’s easier to go dairy free as we go into spring because I’m busy planting lots of seeds indoors and getting ready for the gardening season, which I love.
Made some egg salad earlier with eggs, of course, and added some capers, Dijon mustard, dash of cayenne pepper, fresh dill and parsley, fresh ground pepper, seal salt and mayonnaise. I’ll have some on baby greens. Later on, I’ll make chicken with spices (cumin, salt, roasted ground coriander) sauteed in butter and served on baby greens with lots of avocado and green salsa. Already, had bacon, eggs and espresso earlier this morning. I tend to eat three meals, no snacks and nothing after 6pm or so. Overnight fasts seem to work for me. Curious to know if there are other folks out there who do not fast more that 14-18 hrs as most folks on the forum are doing much longer fasts. I feel like I’m in the minority, which isn’t a bad thing. I’ll keep doing what I’m doing as long as it works. When it doesn’t then it’s time for a change. Keep the body guessing!
I had a narrow escape with the sour-cream 2 nights ago while having dinner with the in-laws. Very proud of myself.
As an experiment, I tried half of a pink grapefruit with last night’s dinner as I had heard that grapefruit can help with blood glucose and insulin. This morning’s FBG was 4.2(75.6). I’ll take it. One has to be careful with grapefruit as it does interact with certain medications. Not so with metformin from what I’ve read. Can’t remember when I last had grapefruit. Just for the record my carbs yesterday were pretty low (half an avocado and some baby greens).
I am doing dairy free due to skin issues, and I find it stalls me.
I usually make my own ‘dairy free’ coffee creamer, which I have grown to like more than real cream:
1 egg
1 can coconut milk (full fat)
2 oz MCT oil
splash of vanilla
dash of cinnamon
Put egg in the blender on high, slowly add the MCT oil and coconut milk, vanilla and cinnamon. I keep it in a blender bottle in the fridge.
I find making sure the coconut milk is completely liquid and well shaken leads to a smoother creamer that mixes easier in my coffee. I usually put the can in a bowl of hot water and shake it often until its liquid (I live in New England, so ‘room temperature’ in the winter is 68 degrees and the milk is solid)
It’s been 8 days and I’m down 6 lbs. I can’t believe how easy it was to give up dairy. I’m a little low on fat every day, so I picked up some coconut cream and plan to make fat bombs this weekend.
@PrincessPupule Excellent news! I was surprised, too, especially when I was eating dairy free when I started keto. I lost a few pounds even though I was at goal weight. Not complaining. Didn’t cut calories as I replaced dairy with coconut products (milk and cream) and nuts. Felt overall quite good. I can tell that feeling is back now.
Shredded coconut is delish! Sometimes, I’ll use toasted ribbon coconut when I’m cooking.
The one day grapefruit experiment is over. lol Hubby got the other half. Feeling good today and spring has sprung. Already, walked some trails with Karma. Did a workout of the VirZoom and had my heart rate up to 145 with no problem. It’s virtual reality (Oculus Rift) on a stationary bike. Lots of fun with a good workout. Tried the Wii years ago and hated it. I couldn’t get engaged and it didn’t feel like a workout at all. I did bike racing today. Now, I’m off to work in the greenhouse.
I love to experiment with roast chicken. Today, I’m making Poulet au Four from Diet doctor.
