I cook a lot, especially on the weekends when 8-10 of the grandkids come over (along with their parents) and SWMBO handles desserts and vegetables. We alternate --wings, bbq chicken, ribs, brisket, pulled pork, burgers, steaks, with the occasional prime rib or beef tenderloin when I am flush. But during the week it is only me eating keto so I tend to make batches. Crack slaw is great along with keto meatloaf. I make pork rind nachos as a snack in lieu of a meal and the bits that are too small or oddly shaped for nachos eventually get turned to dust in a blender as the meatloaf binder. Taco pie is browned hamburger, chorizo, onions, garlic and taco seasonings in a pie shell with eggs, cream and cheese added in and on top.

What are your favorite “make in advance, batch” meals?
