Out here in Iowa, it’s Country Fair time. My local processor has the contract to process all the the meat animals shown and sold at the Fair. When I showed up for dog food I was happily surprised to find out they were slaughtering 12 prime show hogs.
I ended up with 12 heads, 24 ears and 48 trotters. All would have otherwise been disposed. I’ve already laid in several gallons of pickled pig’s feet and quite a bit of pulled pork. Next comes Head Cheese.
