Nice! That reminds me - we have a full-fledged Tasin TS-108 meat grinder that we bought years ago when we were trying to feed our cats a raw diet. Haven’t used it in years. I should look into ways to use that to provide some meat options.
I have one of these for my kitchenaid. Have had it for many years. Have never taken it out of the box
I tried grinding the liver but I got weird results. I think I need more practice

Liver alone is super easy to chop. Freeze it and cut small cubes, mix them with chunks of beef and grind. If you grind the liver alone it will be mush. Looks really fun to make your own sausage though. The store bought stuff always has some junk.
You can find good sausage where I live, but you have to look carefully at the label.
