Celery in Epic Bars?

General Mills bought Epic at some point and now all of the bars have celery… that was pretty much it for my portable protein. Celery is an allergen. Why do they have to put it in everything. Gah!

I think I’m going to buy a can of freeze-dried beef.

Celery is naturally high in nitrates. Celery powder is widely used so that manufacturers can claim its nitrate free, or no nitrates added, which is a draw for some people.

Thanks, Lol. Yes, it was something of a rhetorical question. I’m a “retired” chef, so I understand the food science. It’s still annoying.

Yes, thay can use celery powder in bacon and claim “nitrate free” LOL.

My Dad was brain-washed by his vegan/dairy-free/gluten-free/organic partner and was bragging on “nitrate-free” bacon. I asked him if his bacon was pink. If so, then had natural nitrates from celery and took advantage of a loop-hole.

He never answered me back so I took that as a YES :laughing:

Somewhat related: I’ve noticed an uptick in non perishable meat w/o add nitrates or crazy preservatives. Maybe because I made a thread about the subject and now I’m getting pushed on me because AI/ Skynet/ cookies, etc. I’m having luck and spent 100 bucks just this month.

Does it have celery juice/salt for the nitrates? Or something else to add shelf life?

“Celery extract” free range turkey. I guess I didn’t look close enough. I guess I need to read up celery extracts/preservatives. I’m looking too much for the long, chemical, names for preservatives that I’ll never be able to pronounce.

I’m actually just allergic to celery. Gives me hives on my feet. It’s a common enough allergy that they label for it in the EU.

Thankfully, I’m not allergic to celery, but I had no idea that substituting celery juice in the name of “no added nitrates” was going on as a trend. An “unexpected side effect” of the real food movement.

Something to remember if friends suddenly get reactions to foods they never had problems with. What’s the next one going to be?

Sorry to hijack the thread. Sorry for my arrogance. I’m relying more and more on non-perishable meat that has celery extract, celery salt, etc. How am I going to know the celery, nitrates, are having a negative effect on me??? What am I looking for?

Others may comment. In my case, it makes me itch. Reliably and intensely. Especially my feet.
