Cauliflower carbs help

Okay so how do you justify eating cauliflour? The carb count seems rediculous…
I made cauliflour sushi and used

Smoked Lox -no sugar 2 pcs 0 net
Avocado- 1 small( used 2 slices)
cucumber strips -1/8th of a large cucumber(2 slices
1/2 cup riced cauliflour cream cheese mixture
tbsp mayo-no carbs
1 Nori wrap

My cauliflour sushi works out to 9 net carbs per Roll based on the above. So inless the cream cheese is killing me in the recipe…how on earth do yall eat cauliflour and live to have carbs for the rest of the day? Cause by the time i add 0.5 tbsp of sushi soy sauce im at 10 net for a meal.

Is 10 net carbs in a sitting okay if most of it is from vegetable(cauliflour)? Will it kick me out of Keto?

I love cauliflower! I mash it with some mozzarella and parmesan and a bit of cream to satisfy my comfort food cravings. I have found that if I eat more than about 300g it won’t necessarily kick me out of ketosis, but it does make me hungry again quite quickly. I think you’re fine with 10 net carbs, although everyone is different - see if you feel like you’re craving carbs after eating it.

It must be some other ingredient in the cauliflower cream cheese mixture as 1/2 cup of cauliflower would only be about 2-3 net carbs.

Moderation is key. The carb hit pays off when you consider how much potassium, fiber and vitamin c it has in it. It’s not easy to get vitamin C into a keto diet. Broccoli, kale, cauliflower and brussels sprouts are the main choices and for variety’s sake, I try to eat one of those at least every other day.

I think the main source of carbs in this dish is the avocado @ 12 carbs per cup and the cauliflower is 5 carbs per cup.

I was going to say, avocado and cream cheese are probably the main offenders. Beat me to it!

Yeah, I don’t get all the rage about avocado. Sure high in fat but a medium one will cost you 15 carbs. I like it in guacamole but in not much else. Now, cauliflower in cheese sauce is worth whatever the cost.

Gentle Ben/ lisylooby/ CarlKeller- Are you talking total or net carbs for the avocados? Because the net carbs of avocados are only a fraction of what you guys are claiming. e.g. 2 slices of avocado is 2g total carbs or <1g net carbs. 1 cup is only 4 net carbs.

It’s the net carbs that count. In 1 cup of avocado there are 12 grams of carbs and 10 grams of fiber. You’d count 2 as net (carbs - fiber).

I follow Page 4 keto which is fairly strict and it allows half an avocado per day without really counting it. It’s considered good carbs. The plan would also allow for one cup of cauliflower or any lower carb veggies (no root veggies). Technically on the plan, you don’t track but if you adhere to the guidelines, you’ll be under 20 whole carbs. So maybe that’s why people don’t stress about it so much.

Net carbs are pernicious. Dr. Westman advises we count all carbs. I’ll enjoy a cup of cauliflower “rice” with my dinner, about 6 total carbs. I don’t see the rub?

What I’ve read is that if you’re counting total carbs stay under 50g a day, if you’re counting net carbs stay under 20.

Also I’m interested to know, for those that count total carbs how do you treat artificial sweeteners like Erythritol which have total carbs of 100% but net carbs of 0? Do people who count total carbs totally avoid artificial sweeteners, or are sugar alcohols counted differently to fiber?

I indulge in the occasional cauliflower tater tots with mustard on them.

It’s the only time I eat cauliflower, but it tastes so much like regular tater tots, especially if you get a good browning on both sides.

Some count total and some count net. Dr Volek & Phinney suggest that ~ 50 g of total carbs a day is enough to induce nutritional ketosis. This is 20-35 grams of net carbs depending on the fibre content. KenDBerryMD does a combination of both that I like. He says that when eating single items that come without a nutrition label (like broccoli, cauliflower, cabbage etc) that you should count net carbs, but if you are consuming something with a label, count total. He says that corporations can be “creative” when posting food stats and the FDA gives them quite a bit of leeway, so you can’t always believe what the label says. My favorite Ketosis YouTube guru (Thomas DeLauer) says to count total carbs and the overall prevailing tendency in this forum (as far as I can see) is to count total carbs.

I guess the bottom line is, does eating 50g of net carbs kick you out of ketosis? For me, the answer is no, but I’m sticking to 20-25 total carbs for now because I feel great and I’m consistently losing 2-4 pounds per week. Once I’m closer to my target weight, I will shoot for 50g net. So do what works for you.

CarlKeller- That’s great that counting total carbs works well for you. But I think if the OP is asking about a problem with their net carbs and commenters start throwing around total carb figures instead without specifying (especially when we’re talking about items e.g. cauliflower, avocado which you say should be counted as net), it can all get a bit confusing.

Sorry if I’m coming across aggressive (not my intention), just trying to make sure advice we give is clear to newcomers.

No problem, friend. The tendency is to speak from the perspective we subscribe to and since most folks here don’t use net carbs, I spoke in the same way. That’s why I clarified. If what you are doing works, keep doing it. :wink:

I’m not surprised there’s many guidances, which is why I referenced Dr. Westman’s practice. I count every and all total carbs, regardless of source.

What about using Shirataki rice? Less work and less carbs :wink:
