An good trick for preparing Catfish is to first parboil it. Drop the fish or fillets into a pot of boiling water and scoop it out after just a few seconds. It removes much of the oil that causes the muddy taste. Cool and cook. It works with wild channel catfish and bullheads.

I saw a home tilapia raising system that had chicken coops above the tank. It was so the fish could eat the droppings.

A good fish source could be Alaska Pollock. It costs less than catfish in my area. It makes good Mock Lobster.

Yes, well, when you’re poor that’s pretty much what you buy–ground beef, meat on sale, meat that’s been marked down. Also eggs, cheap canned fish, etc. You don’t even look at the steaks or beef roasts.

Yep. That’s what it’s like for me. This catfish costs about the same as ground beef, and I’d like to mix things up a little. I’ve been eating a lot of chicken and pork because they’re cheap. I’m not much of a fan of either, though. I like variety, even if it’s just psychological.
