Daisy's latest extraordinary woman, Carolina, returns for a catch up after her first appearance on the podcast just over two years ago when she was about to give birth to twin boys. She has been crazy busy and chats to me in this first of two episodes about her Masters research project.

Diagnosed with PCOS at the age of 13, Carolina struggled with weight gain and infertility for 16 years before finding keto.

After significant weight loss and reversal of her PCOS diagnosis, Carolina embarked on a career change from Financial Analyst to Certified Nutritionist and will be graduating with a Master’s in Nutrition from Bastyr University in June 2020. Her research thesis title is “Perception and Awareness of Carbohydrate Controlled Diets for the management of PCOS: A benchmark study.” It examines the experience of women who have modified their diets in an effort to normalize their cycles combined with the experiences of clinicians and their perception of carbohydrate controlled diets. 

Now five years keto, Carolina loves sharing the life-changing power of dietary change with others and hopes to continue her research in a PhD program.
