This was a great episode. They think as I do, that some low carb gurus have gone off the deep end with respect to covid.

They also announced an online version of Ketofest…Interesting. I’m looking forward to hearing about this.

Also, Carl hinted about smoking ribeye, though he says he likes his sous vide.

Carl, if you’re listening, combine the two:

I don’t even attempt to solely use the smoker any more. I follow these recipes, cool down the meat, put it in the fridge. Then smoke a short while to heat back up.

Best of both worlds: tender + juicy due to sous vide; and smokey due to a smoker.
