All carbs are not created equal. Did you eat junk or did you just eat more carbs than usual? Going overboard on grains, sugar, pasta, wheat, etc. can cause flare ups in many folks who are sensitive to those things, especially after an extended period of abstinence.
If you experienced symptoms after eating nutritionally dense carbs like pumpkin, sweet potato, berries, or legumes, then itβs a different story. Likely your body has down regulated the machinery needed to process carbohydrates, due to lack of use. In other words, youβve developed a carb sensitivity- the inability to βhandleβ carbs well. This is not permanent, and itβs not pathological. This can be reversed or avoided by increasing carb intake on a permanent or cyclic basis.
I want as much metabolic flexibility as my body can have given my level of insulin resistance. I do this by eating at (not below) my empirical carb tolerance. And I occasionally eat above it a few times a month. If I know in advance that I am going to deviate drastically from plan, like Christmas dinner, then I fast a couple of days prior (to get my insulin levels extra low) and a couple of days after (to get my insulin levels back to normal quickly). YMMV, but Iβve never had any bothersome symptoms even after eating junk.
