Bored, smoking ribs

First, beef back ribs. Sous vide 36 hours then smoke.

Best way to cook beef short ribs is sous vide, then smoker!

My last batch was 140F for 48 hours, then 3 hours in the smoker. I’ve done 72 hours at 133 and while they might be a little more tender, the 48 hour cook sure was good. Since it means trusting a 3 day weather forecast, that 72 hour cook is a little more precarious.

What temperature did you cook for 36 hours?

The ribs look great, but 36+ hrs is a long time to wait to beat boredom! I just smoked some good California homegrown and it cured my boredom in two minutes! Happy eating and plague quarantine! :joy::joy::joy::cowboy_hat_face:
