Best way to cook beef short ribs is sous vide, then smoker!
My last batch was 140F for 48 hours, then 3 hours in the smoker. I’ve done 72 hours at 133 and while they might be a little more tender, the 48 hour cook sure was good. Since it means trusting a 3 day weather forecast, that 72 hour cook is a little more precarious.
What temperature did you cook for 36 hours?

The ribs look great, but 36+ hrs is a long time to wait to beat boredom! I just smoked some good California homegrown and it cured my boredom in two minutes! Happy eating and plague quarantine!
