When reading the book ‘the fat of the land’ by Vilhjalmur Steffanson, I noticed that he mentioned multiple times how various tribes all over the world favour the same cuts of animals (e.g. fat behind the eyes, brisket, kidneys, fish heads, etc.) but that they only eat the liver of select animals, tending to give this organ to their dogs, for example. However, nowadays many recommend eating the liver - it being toted as the most nutrition food available. Is this true, or are we better off prioritising kidneys, heart, brisket, typical cuts like sirloin, ribeye, chicken thigh, etc?

It may or may not be good for me. All I know is that I will not eat it in a boat or with a goat, etc, etc. Can’t stand it. Bleh

I’m just guessing here, but I do know the liver of some animals is toxic to people, so that might be why. Maybe dogs can tolerate some kinds of liver better than us. I don’t think it means we shouldn’t have liver from cows and similar animals since we don’t have any adverse effects from it, and it does contain a lot of nutrients.
