My friend gave me his older blood glucose reader and stripsvetc. I am looking to see how certain foods affect me . I ate last night at 10 est and did a test at12noon and had a reading of 6.8( he said normal ) I want to try to see how certain foods affect me.if I had a bunch of vegetables with cream to see how it affects me would I test 30 minandthen 60 again . And how much of a change means maybe avoid not eat as much

You may want to do your own research about what are normal readings and what aren’t, and maybe have a chat with a doctor rather than just listening to your friend.

Are you saying that you ate at 10pm (2200) and then tested at noon the next day (14hrs later)? A reading of 6.8 (122) seems high for fasting that long. If it was only 2 hours later it might not be as bad.
But establish your own baselines first. You need to know what your reasons regularly are.
If you are experimenting then test right before (T0) and at T30, T60, TOP and T120.
And always consult a doctor if you think you have a medical concern.
