Life Extension website has a 5 point glucose and insulin tolerance test that goes out to 3 hours (Fasting, 30min, 1hr, 2hr, 3hr) for around $150 so if you ever want to do it again you can try that.
For checking this stuff you could probably just order a fasting insulin and glucose test and then go in for blood work at 30 or 60 min after eating what you wanted to check… still pricey.
