Was trying to add this to “What did you Keto today?” but decided just to start a new topic. This morning I experimented and sautéed some baby portabello mushrooms (sliced) in avacado oil, then added some fresh spinach to that. Added 2 beaten eggs with a little Mrs Dash, fresh ground black pepper blend, pink Himalayan sea salt mixed in and just sort of stirred it around for a couple of minutes. Topped with some shredded cheddar and had 2 slices of bacon on the side - next time I may cook the bacon ahead so I can crumble it into the pan instead. What should I call it? Frittata Florentine? It was truly delicious, may inspire me to try cooking a bit more often. Hoping this helps to get me back on track.
