Question I have is on fat. I have been buying grass fed grass finish beef. I made soup with ground beef and it has a lot of fat. Do you skim off fat or is it ok to eat. It’s really good so I hope answers are eat it

It’s OK to eat. You could also use it to make tallow, if you have a lot or gather it up over time.

You can use it to sear beef or fry. I fry beef in tallow, pork in lard, etc. It’s easiest to make in a slow cooker (search for “slow cooker tallow”). But you have to have quite a bit of fat.
