So, I made peanut butter cookies yesterday, without doing the math first. Gained a pound this morning from that failure.
I used regular peanut butter and didn’t add sugar which normally it calls for 1 cup of sugar. Instead I used cream cheese and 1/8 cup of stevia.
My thinking was that peanut butter itself, probably doesn’t have much more sugar per cookie than eating a Dark Chocolate bar. The cookies really aren’t that sweet tasting, but that was deceiving.
But I did the math this morning when I realized each cookie had 3.96 grams sugar just from the peanut butter, compared to 2 grams for a whole chocolate bar which I don’t normally eat the whole bar in one sitting.
Anyway, it’s a bad idea to use real peanut butter. Or at least if you do restrain yourself to 1 cookie, I think I had 4 when they were still hot. I’m going to have to try this with non-sugar peanut butter and see if I can get it to taste as well.
Morale of the story is do the math first if possible, and don’t make peanut butter cookies if you can’t stop at just one. LoL.
