Today I bought a package of Wright’s Ends and Pieces bacon. “Great for Seasoning” it says. Once I opened I felt they should have called it Hunks, Chunks and Pork Belly Pieces. I pulled out a HUGE piece of fat!
It isn’t salty like salt pork so I was able to use some apple smoked salt. I used a small dutch oven on medium heat starting with the pork. I also squeezed off some bits of pork sausage, threw some Lil Smokies in there and covered the dutch. RIght before the big hunk of fat looked ready to eat I added a quarter stick of butter.
I didn’t pour off the excess fat and added some heavy whipping right before I took it off the heat.
Man oh MAN! Talk about Satiety!
