Back at keto, new ideas

I’m just checking in.
I realize my previous attempts at keto were half-hearted at best.
I’m at the three week mark.
The grocery store was always an event, because I cannot walk for long without having back pain.
I’ve decided to start my meal planning with ” what vegetables am I having today”.

I’ve got the fats, and proteins covered easily.
My challenge has always been eating vegetables.
And learning to make them tasty.
I’m using my timed oven and roasting vegetables.
Also, starting at 20 grams of carbs, knowing what carbs I will eat before meals takes the stress off.

Looking at labels on cans of tomato sauce, why do I want to down 11 to 17 grams of my carb allowance on sugar…
I went with plain canned diced tomatoes.

My favorite choices this week, avocados, macadamia nuts, and dark chocolate.
I’m having an MRI today to discover the source of my back pain.

I hope you find the best way forward for yourself. And, you know, you don’t actually have to eat vegetables. I personally like them but often go days at a time with none and feel well for it!

I have found that I need to limit tomatoes and tomato sauces. One that is not bad on carbs is RAO’S brand.

If you do dairy you can always mix canned tomatoes (or tomato sauce) with cream, it helps boost the fat and cut carbs a little bit.
For veggies, I like to sautee broccoli or zuchinni in butter then add some parmesean cheese! Maybe add a touch of lemon juice to the sauce.

I know you weren’t specifically asking for suggestions, but I thought I’d throw it in. Also, there are many people on here who have gone carnivore and done away with veggies entirely!!

Agree - tomatoes are fruit so have to be careful on quantity. And Rao’s sauces don’t have any added sugar and are very good!

Exactly my suggestion, if you don’t want veggies don’t eat them. If you do away with them entirely some liver in your diet is recommended. Choice…liver or vegetables? Choose wisely! :cowboy_hat_face:

IIRC, Mezetta pasta sauces also don’t have added sugar. Their marinara comes in big jars, so if used in judiciously small servings, it would go a long way.

Thanks for the responses…

I know I can skip the veggies, but my tummy is happier with them…thats just me.

TWO HOURS for that MRI…
I’m glad it’s over.

That is a long time!

My kiddo recently got an MRI, but since she’s 6 they did it under general anesthesia. It still took about 2 hours, and it was just her chest :frowning: She even got so warm that they had to put cool cloths on her to cool her down.

Another easy option to avoid having to munch on salads as big as your head is sautéing spinach or arugula in butter (both great dark leafy greens). A little salt and pepper to taste, finish heating and sprinkle with a little crumbled blue cheese or parmesan cheese.

Several handfuls (like 100 grams) reduces nicely to a small tasty side dish in the time it takes the oven to pre-heat.

Yes, from the tomatoes. Unlike most other sauces they don’t ADD any additional sugar to their sauces.
