I eat and love all kinds of ribs. My favorite are pork shoulder country style ribs, bone on. A great time!

I love my smoked bbq pork butt method and my brisket method, but until my last rib cook, I’ve just never been satisfied with the flavor. The secret was switching from baby backs to the spare ribs (where the St. Louis cut comes from). They have fantastic flavor.

The country style ribs are sliced pork butt. They’re also pretty heavily marbled and do well in a crockpot on low all day, an oven set to 275*F for 3-3.5 hours, or even thrown on the smoker for a few hours.

I’m sure they’ll be splendid in an SV also.
