Hello, can anyone point me in the right direction to find research linked to reducing arterial plaque using the ketogenic diet? I have a friend who has just been diagnosed with 50% plaqueing of his widow maker artery and is being encouraged to cut out fat. He is interested in going Keto but would like to see if there is any evidence/research or even just case studies that shows the reduction of plaque using keto? Much appreciate. Griz

Check out Good Calories, Bad Calories, by Gary Taubes, and Big Fat Surprise, by Nina Teicholz. They are both popular summaries, but they do an excellent job of covering the scientific literature. You might also find The Art and Science of Low-Carbohydrate Living useful as well. It is written by Stephen Phinney and Jeff Volek, physicians and nutritional scientists who pretty much pioneered the concept of nutritional ketosis and who have been researching how it works.
I have listened to Dr Adam Nally “docmuscles” say he has seen anecdotally in his own practice patients plaque going down as much as 20% after being LCHF/Keto for several years.
