OK so here is what I’m trying to source… butter, hwc, too easy got them…
But Cacao butter, red palm oil, tallow where on earth can I find these here in oz?
Any AUSSIES out there... Help with sourcing fat
Pork lard, beef tallow, duck/goose fat etc you can buy at IGA, and to a lesser extent Woolies and Coles.
Pretty sure I got my tallow from the Queen Vic Markets here in Melbourne, so I guess the main market in your city would be a good bet. No idea about the others, sorry.

Cacao butter is easy (at least in our big cities) - brands like Loving Earth are available in many health food stores like Go Vita and Great Earth. Same with red palm oil - I’m sure I’ve seen that it both these stores too (though never tried it myself).
Tallow’s much harder. I’ve seen little tubs of Wagyu rendered beef fat in the meat fridge at Coles. Your best bet might be to find a good local organic/biodynamic butcher and see if they can help.
None of these fats are particularly essential to the keto diet, so I wouldn’t stress about missing out on them if you can’t find them. (I find cacao butter is useless for anything apart from sweets and fat bombs anyway, because it makes everything tastes vaguely chocolatey. Wouldn’t buy it again.)

Amazon in Australia SUCKS. I just looked up red palm oil (for laughs) and yeah, you can buy it via Amazon Australia - for $201 for one bottle. Um … no …

I think it’s probably a good choice in terms of human health (I’ve only looked into that side a little) but yeah - those orangutans
Bacon, Fatty lamb chops, Scotch Fillet, Mackerel, Tuna in Olive oil, Macadamia nuts, and butter are my main sources of fat intake but I do use Duck Fat, and Tallow which I source from Coles. Duck fat has a better taste than lard or tallow in my opinion.
I only use coconut oil, butter and lard. I love lard, maybe its the European in me. Olive oil for salads, I never cook with it.
I think that sometimes we can get carried away with all these rather expensive top shelf products. Does it make our keto journey better?? I certainly dont think so., even though the manufacturer tries to convince us otherwise…
I have no use for cacao butter or red palm oil, so can’t help you there, but lard should be available in most supermarkets. If not, any butcher should be able to provide you with pork fat to render. The best lard, leaf lard, comes from the fat around the kidneys. Likewise, pre-rendered tallow might be hard to find, but just ask any butcher for beef fat for rendering.
Rendering is dead easy. Put the fat in a pot, put the burner on “simmer,” and come back in a day. Strain out the solids, and the remaining liquid is your lard or tallow. I often use the slow cooker, instead of a pot on the stove. Just depends on my mood, really.
You can also get along just fine on nothing more than butter and bacon grease.
