When I was completely cutting out sugar I found that chewing a piece of sugar free mint (not spearmint) gum while sipping coffee with cream tricked my mind into thinking it was sweet. It may sound odd but it worked and now I just drink it unsweetened with a bit of heavy cream.

A very tiny amount of salt. I have done it. I wanted to see if it made black coffee palatable. It did. Broke the bitterness just enough to make it drinkable for me. I drink from a large cup, about 500ml in size. And I use two pinches of coarse, kosher salt.

ground up hemp seed in the grinds while brewing take bitterness away also, but does add protein. Also often bitter coffee is caused from over rinsing the beans

I have been trying to find a decaf (Swiss water process) coffee and am have a hard time with the bitters. Any suggestions? I have a couple new flavors yet in my pantry to try but am still looking for new.

I have been limited here but prefer the slow drip method currently. Open to suggestions.

often when bitter the brewer uses less coffee and that is actually the wrong thing to do if need be brew strong and add water after the brew is done, the longer water is exposed the more of the bitter part of the coffee is released, also paper filters can do funny things to a brew also.

Don’t use paper filters (cloth) and use plenty of beans. So far I am favoring a Costa Recan brew but still get slight bitter when drinking it black. Ok with a little cream.

I have very little experience with decaf, but find french press or a greca make a much better cup of coffee than drip.

You could cold brew ~ let the freshly ground beans soak for 18-24 hours. Dilute the concentrate with boiling water for hot coffee. No bitterness with cold brew. Lots of info if you google.
