Is there something to use to help ice cream from totally freezing besides alcohol? I’m in recovery and and have been advised to not use anything like vodka or whatever(even though that was never my drink of choice).
I hate having to wait for it to soften or put it in the microwave and hope there is something else I can do. Of course if I can’t then I just have to deal with it, but wanted to see about it from other Keto eaters!

Alternative to using alcohol in recipes
Some people have used glycerin to help keep it softer. Some people have used xylitol rather than erythritol because it’s not supposed to recrystallize like the erythritol will. I’ve heard people talk about BochaSweet as a sweetener that can be used that won’t harden as much but I have yet to find it anywhere.
You’d have to google a little bit to see some of the variations out there. AllDayIDreamAboutFood.com is a site run by Carolyn Kechum and I know she has several recipes that might have some info about various sweeteners attached to the recipe notes. I know she used vodka in some of her recipes but I don’t think all. There are probably some others gurus that might be helpful, I’m not familiar. I think there is also a cookbook that deals with keto ice cream but I haven’t been able to get my hands on that one yet either.
Not sure if any of that might help or not. It’s something I’ve wanted to delve into but have been cutting down on my desserts lately and it just hasn’t come up.

I love her recipes, that is where I found one of my favorite ice cream recipes actually. I will look into those things you mentioned. At least that gives me a starting point and I will let you know what I find.

Here is an ice cream recipe from Carrie Brown. If you decide to try it, you should read the whole post to get all of her advice and instructions. I would also strongly recommend buying Bob’s Red Mill brand of guar gum. People who have used other brands have complained of sliminess and wasted ingredients. You can substitute any nut milk (almond, coconut or macadamia) you prefer for the hemp milk (Carrie says that she thinks the hemp milk makes it taste a little better). She uses the alternative sweetener, xylitol (NO SUBSTITUTIONS), which is a deadly poison to dogs, even in very small amounts. Some people with dogs won’t allow it the house.
I haven’t made this recipe, I made the Blueberry Cheesecake ice cream recipe from her Keto Ice Cream Scoop cookbook. It was scoopable right out of the freezer. And yummy!
