Alternative keto fried rice

Today I met keto fried rice after my kids have been asking me to make my famous fried rice I used to make years ago with white rice. So I made my first that way I wasn’t tempted to if any of the family fried rice. But first I wanted to get prepared for bed by taking my shower and things that I needed to do. So I made my keto fried rice and set it to the side and then I was going to come downstairs and make the kids keto fried rice. Well the kids thought I’ve already made their fried rice and they were like Mom I really like what you did with the rice this time it feels small and crunchy. One of my kids told me. And I said what are you talkin about I haven’t even made your fried rice yet. And my kids are no mom the right she got on the stove. I said that’s my keto fried rice and they all said what I knew it tastes weird. Before I even told him it was keto fried rice they were loving it and then all of a sudden they couldn’t wait for the real fried rice. My kids are trip. LOL

Here’s the recipe

  1. 1/2 head of cauliflower rice
  2. 3 chopped whole carrots
  3. 1 clove of garlic
  4. 4 skinless thighs
  5. 1 chopped fresh green onion
  6. 1/2 cup of onion
  7. 1 tablespoon oil crushed red pepper
  8. Some of my red chilli oil to cook in and place on top when completed

Just be aware that 3 carrots and 1/2 a cup of onion might be adding over 20g of carbs to your meal.

Yes I’m very aware but I don’t think anybody can eat that whole pot of food and usually take me about two days to polish it off unless my kids are eating with me

All my meals that I prepare usually take multiple days to eat. I don’t eat an email with in one sitting because the whole goal keto is prepping ahead

Here is an egg fried rice variant you might like to try:

Very approximate and easy to vary to meet preferences:

1 cauliflower (riced)
2-3 lbs chicken breasts and/or thighs, diced small
1/2 lbs cooked and pealed shrimp
8 eggs cooked like an omelette and then smooshed into little pieces (yes that is a technical cooking term!)
2 cups of green peas
1/2 red onion
1-2 bunch(s) spring onions (shellots?)
Halved brussel sprouts (if you wish and to taste)
1 yellow pepper
pepper and lots of salt to bring out the taste.

I fry the rice, chicken, shrimp (in butter and garlic), eggs and sprouts separately, and keep them wrm in the oven, then fry the peas, peppers and onions together, combine all the ingredients and finally add the salt and pepper to taste.

Yes, some ingredients may not be considered keto, but I think its ok based on portion size and composition and this meal does not adversely spike my blood sugar based on my keto mojo.

Like I said in my previous post I don’t think anybody sit down & eat one big huge meal like this I think this is the keto type of way as meal prep

It doesn’t seem so much for me but I have no idea about the amounts and never tried to eat thighs with much vegetables, maybe it’s a good, satiating combo…
Still, some folks CAN eat a lot. I’m not so bad with it myself. I need calories and veggies doesn’t even count.
But your recipe made me think, it has some of my fav vegs… I loved fried cauliflower so much when I went keto and realized that’s a thing (I fried cauliflower before but not in that tiny pieces! it’s funnier this way) that I never added anything else, just some eggs and maybe soy sauce. And I banned it right away as no way 20g net carbs is enough for that dish alone, it was below my minimal amount, I loved cauliflower with a passion and in big amounts. But I can eat a small amount now, only 500g cauliflower :slight_smile: It has a very bad carb/calorie ratio as it has no meat and only 2 eggs but it’s no problem, I just eat some protein afterwards and call it a good meal.

About the carbs of the carrots… They come in every size anyway. I always buy 200-400g ones. Yours are surely much smaller. I eat way carbier food sometimes, in small amounts, of course, many of us do that. For me, using carrots, onions, garlic and green peas might be way safer than making a cauliflower rich dish, the higher-carb vegetables are usually so tasty, a bit is enough!

To me cauliflower is an excellent keto mainstay ingredient due to cruciferousness and very low carbs when you subtract the fiber. An entire medium head of cauli is only 15 grams net - so a half head is around 8gm etc.

I buy frozen riced cauliflower from Costco when I can as it’s handy, and each packet is only 1/2 pound (total box is 3 lbs).

Of course, once you’re mostly fat-adapted (around week 3-6), if you’re not IR you can find that you can handle a lot more whole foods non-grain carbs without slowing recomp.
