A ladies luncheon

I’m going to a small ladies lunch this Friday.
I’m the only one doing Keto/low carb.
Recently, 2 have become widows in less than 2 months. We are supporting one another during this time and we are a close group.

What can I bring (food) to this event.
I’m really nervous about this because I’m struggling with lowering my blood sugar (which runs 180). And I confess I am very week when around food. Help!

Do you have to bring a main dish? Or could you do a simple charcuterie board for a starter plate? You could provide crackers for those who ‘carb’ and you can eat keto, without anyone even realising. Or you could bring sandwich fillings but make yours as a salad on some baby spinach or something? Noone seems to bat an eyelid at cutting down on gluten/bread, so you wouldn’t necessarily need to explain your choice. I hope the lunch goes well for you, sorry to hear that two of your friends have been recently bereaved.

Other possibilities might be deviled eggs (yum!) or “fully loaded” cauliflower (double-yum!). Not to mention cocktail franks wrapped in bacon.

I was going to suggest deviled eggs too.

I once took an charcuterie tray to a dinner. Putting it together cost me a lot in money and time. Turned out the hostess didn’t believe in appetizers, and she insisted that the charcuterie be placed on the table with the main course dishes. Of course no one ate it then. But charcuterie would probably be a safe bet for a luncheon.

You could prepare chicken thighs and shred the meat and add fajita flavors and grilled onions & peppers, and bring the fixings for tacos or fajitas for those who eat them. Or how about a dish of meatballs with a side of pasta sauce or in a creamy Keto gravy made with the broth and some heavy cream?

Even a tuna or egg salad would work and you could offer bread, pita bread or crackers for those who like it. I have lots of ideas!

How about a keto chili dish, or beef stew made with cut up white radishes instead of potatoes? (I don’t add beans and use only a little tomato paste).

We often use chili, although it’s a paleo chili. Not that many carbs, but a bit higher than true keto.
