Omg!!! I’m loving KETO!!! Tell a Cuban she could eat pork rinds??? HELL YEAH!!! :grin::grin: So, I’ve tried several recipes online, and even made a Cuban party favorite that’s usually SO FATTENING that normally I’d avoid. I’ll share this idea with you guys if you want to try something new. THE ONLY PROBLEM is that like a typical Cube, I don’t use measurements. I just eyeball it. So, you have been warned. Ok…KETO version of Cuban Imperial Rice. (Lazy girl’s way of doing it.)

Go to Publix or Walmart or wherever you can buy rotisserie chicken. Get yourself one of those suckers!!!

2 bags of cauliflower rice (Green Giant…u could steam the bag in the microwave)

Grated Parmesan cheese

Mayonnaise

Butter (melted butter to butter your pan. I use like a 5x5 deep dish Pyrex)

Get that rotisserie chicken and remove all of the meat with your hands and shred into small pieces

As you’re doing that disgusting task, start steaming the first bag of cauliflower rice. Then do the other bag.

Once the chicken is shredded place all the meat in a bowl. Dump some mayonnaise in there and mix as u would to make chicken salad.

Now you’re ready to assemble the Imperial Chicken dish. This dish is like a lasagna, you layer the ingredients one on top of another. In order for nothing to stick to the pan I melt some butter and use it to butter the Pyrex pan completely.

Now, spread some of the steamed cauliflower rice in the pan. Make a layer of it. Then sprinkle Parmesan cheese over that layer. Then place a layer of the chicken with mayo. Now you repeat. Layer of cauliflower rice. Layer of Parmesan cheese. Layer of chicken with mayo. Keep going until your last layer is the rice with Parmesan cheese on the top.

Place the pan in the oven at 350 for like 10 minutes so the cheese could melt and the top layer of cheese gets a golden color.

When it’s ready, take it out and let it cool a bit, then slice as you would a lasagna and serve.

If you want to eat it like a true Cube, make yourself an avocado salad. Cube an avocado, add salt, and serve the avocado as a side dish to your Imperial Rice.

Now…if only there were KETO MOJITOS to wash all of this down, huh?

I use a beater (the ones you use to beat cake mix) to shred chicken, pork and beef. Yes, this works! And it works really well!!
